Cool Season Vegetables
Cool season vegetables prefer cool soil and moderate temperatures. Because they tolerate a frost, they can typically be planted as soon as the soil can be worked in the spring. Some, like lettuce and spinach, do best if planted early enough to mature before the hot weather hits. Root crops, like carrots and onions, don't mind the heat once they are established, but prefer to be planted in cool weather.
